Does anyone know if there is a dohc cam kit for the beat or if it is even possible to make it a dohc.

Everything is possible but a dohc would bring no benifit for huge cost. There is a high lift cam available from Feels (Honda twin cam) which is still pretty expensive but does give some performance benifit.
I was just thinking if you make the gaps smaller, the valves will open more giving you a higher lift. Ok it might not be the best when the engine is cold.

Not likely to have the effect you're after Adam,
The gap is there to allow for expansion as the engine warms up. If you make it smaller you are right that they will open a bit sooner, the problem is when the engine is warm and the valve stems have expanded the valves will not close. With the engine at the correct running temp the gap should virtually disappear. It is a common mistake to set the gap with the engine still too warm, the effect of that is to end up with a gap that is too big and some scratching of heads because despite being "SURE THE GAP IS RIGHT" there are still noisy tappets.
The way to achieve what you describe it to change the profile of the cam.
